Mercy to offer healthier food options for patients and staff

ROSEBURG, Ore. -- Mercy Medical Center in Roseburg will soon offer healthier food options for staff and patients.

Working with Blue Zones Project Umpqua, the hospital will add four plant-based options to its patient menus in the coming months.

The hospital had food samples for the staff to get opinions on the new items.

Both agencies say this could help patients with their overall health.

"The patient population are suffering from chronic diseases, so it's really important to provide this education about healthy eating and the impact that healthy eating can have on chronic diseases," said Ashley Peterson with Mercy Medical Center and Blue Zones Project.

Mercy Medical Center will have plant-based food options available for patients in May.

The hospital will also add them to the cafeteria menu this summer.
